I practically grew up with this recipe. This chicken dish brings back many childhood memories. Aside for BBQ chicken, the honey mustard chicken came in second place in my favorite list of chicken recipes. My mother would often make a honey mustard marinade to make grilled chicken. I even experimented with nuggets. The sweet and tanginess of the honey mustard is explosive. The bread crumbs add an extra crunch to it. Cooking chicken without the skin can be very risky. The marinade helps preserve the moisture of the chicken. This chicken is delicious yet so simple. With only 3 basic ingredients, it doesn’t require that much fuss. Serve this chicken with rice or any steamed green vegetable such as broccoli,spinach,kale,or string beans.
For this recipe, you will need:
- 1 3 lbs whole chicken quartered and skinned
- 5 tablespoons of Dijon mustard (you can use your favorite brand)
- 3 1/2 -4 tablespoons of honey
- 3/4 cup of unseasoned bread crumbs
In a bowl, whisk the honey and mustard until dissolved. Using a brush, coat each chicken piece with the honey-mustard mixture. Place the chicken in a ziplock bag and marinate for 4-8 hours.
Preheat oven to 350 degrees F. Spray a 9 inch baking pan with cooking spray. Remove chicken from the bag. Pour bread crumbs in a deep bowl. Dredge each piece of chicken on both sides with bread crumbs and arrange in prepared pan. Spray chicken with cooking spray to give it that crunchy texture. Bake uncovered for an hour. Serve immediately (or asap).
