Spiced Winter Fruit Cake

The reason why I dubbed this cake a winter fruit cake because this cake consists of fruit that are available this season such as apples (late Autumn), pears , and red grapes. They is when they taste the best. At least in my opinion. I did not use red grapes for this recipe because my local supermarket didn’t have such great quality of them. So I used dark raisins instead which is another option. Raisins are essentially dried up grapes. In order to give these raisins some plummy and juiciness, I merely allowed them to soak in warm water for a couple of minutes.  The main perk of this cake that it is oil-free/butter free but is still very rich. That’s right. I decided for forgo the oil and butter/margarine. I used non dairy milk that added some moisture and richness to this cake. Sometimes I add a bit of liquor to most fruit cakes but you are at liberty to leave that out. I also used orange zest as it strengthens the flavors in this cake. You can use lemon zest as well which also does just as a good job. I also find it that a bit of ginger highlights and flavors and adds some freshness to the cake. This cake serves well hot or cold. If serving hot, accompany it with a scoop of vanilla ice cream.

For this recipe, you will need:

  1. 1 1/2 cup to 2 cups of cake or all purpose flour
  2. 1 teaspoon of baking powder
  3. 1/2 teaspoon of baking soda
  4. 1 teaspoon of salt
  5. 2 large eggs or 3 egg whites
  6. 3  tart apples cored and sliced
  7. 3 pears cored and sliced
  8. 1 cup of seedless red grapes or raisins
  9. 1/2 cup of unsweetened  apple/orange juice
  10. 3/4 cup of non dairy (or non-fat) milk
  11. 1 tablespoon of orange/lemon zest
  12. 1 teaspoon of vanilla
  13. 1 teaspoon of liquor (you can use apple flavored)
  14. 1 teaspoon of cinnamon
  15. 1/2 teaspoon of nutmeg
  16. 1/2 teaspoon of crushed ginger
  17. 1/2 of brown sugar or honey
  18. Handful of walnuts


Preheat oven to  degrees F.  In a bowl, whisk all the dry ingredients including the spices till well combined. In another bowl, beat  eggs until frothy. Add juice,zest, milk,sugar,ginger,liquor and vanilla; beat until blended. Stir into flour mixture; mix well. Fold in apples,pears,grapes/raisins and walnuts. Bake for  40-45 minutes or until a toothpick inserted near the center comes out clean. Serve warm (although it tastes just as good cold).

Yields 15 servings
