Chocolate Chip Oat Tart

Have you ever had one of those mornings where you are sick and tired of constantly eating oatmeal or Cheerios for breakfast everyday since you have nothing else? I tend to have those mornings a lot. And I don’t have the time nor the patience to make pancakes or an omelette on a daily basis. Contrary to what people may think, I happen to like oats a lot.  Aside for their high nutrition value of high fiber and lowering your LDL cholesterol level, they are very filling.  1 cup of oats are enough to delay any cravings you may have for a while therefore keeping your body weight on bay. Oats can be utilised in many healthy ways. Aside for hot cereals, oats can be used to make muffins, cookies, cakes, and tarts.  Oat tarts seem to be the latest breakfast fad. I threw in some bittersweet chocolate chips even though raisins would have  been a healthier alternative. Just think of it as a giant oatmeal cookie baked in a tart pan. Give up whatever high hopes you have for having leftovers of this  chocolate chip oatmeal tart because there won’t be any. All you can do is hope that someone will be generous enough to leave you with some crumbs. The best part of this chocolate chip oatmeal tart is that its gluten-free and vegan 😉

For this recipe, you will need:

  1.  1/2 cup of oat flour
  2. 1 cup of quick oats
  3. 1/4 cup of unsweetened applesauce
  4. 1 can of chickpeas drained
  5.  1 1/2 cup of brown sugar or honey
  6. 1/4 cup of earth balance (or an equivalent) soften
  7. 1 teaspoon of vanilla extract
  8. 1/2 teaspoon of cinnamon
  9. 1/2 teaspoon of nutmeg or allspice
  10. 1/4 teaspoon of salt
  11. 1 cup of bittersweet chocolate chips
  12. 1/4 cup of chopped pecans or walnuts (optional)

Preheat oven to 350 degrees F.  Combine all ingredients together with the exception of chocolate chips and nuts in a good quality food processor. Process till smooth. Fold chocolate chips and nuts into the batter. Transfer into an 8 inch tart pan. Bake for 35-40 minutes or until an inserted toothpick in the middle comes out clean.
