Grasshopper Pie

This pie consists of a creamy mint mousse filling and chocolate pie crust as a base.  This mint-flavored dessert is refreshing during the summer heat.  With only marshmallows, mint liquor a pre-made pie crust, whipped cream and chocolate chips, this dessert doesn’t require any baking and is easy to prepare.  There are numerous grasshopper pie recipes, this one is one of the simplest.  This dessert can be served frozen or chilled – we happen to like it better frozen.  Because this pie contains alcohol, it is not recommended for children.  Also, apologies to the health food buffs out there, but this is not exactly a healthy dessert.  Every now and then we can use palate pleaser :c). For this recipe, you will need:

  1. 1 9 inch chocolate pie crust
  2. 1/4 cup creme de menthe liquor
  3. 1 tsp green food coloring (optional)
  4. 1 1/2 cup soy milk
  5. 1 handful chocolate chips
  6. 1 cup dessert whip

Instructions:

Pour soy milk into a sauce pan over medium heat.  When it starts to foam, add marshmallows and creme de menthe liquor.  Stir until it thickens.  Remove from heat and set aside.  For the dessert whip, with an electric mixer, beat dessert whip until stiff peaks form.  Fold it in to the marshmallow mixture.  Fold in chocolate chips.  Pour mixture into the pie crust.  Refrigerate or freeze for at least 2 hours.  Serve chilled or frozen.

Yields 8 servings
